Vegan & Gluten-Free Pasta Salad

The party salad that everyone will love - with fresh herbs, vegan mayonnaise, crunchy gherkins and gluten-free pasta, this light salad is the perfect side dish to vegan sausage, schnitzel or to enjoy on its own.
Ingredients
Serves 6 to 8
500g gluten-free pasta (e.g. penne or fusilli)
700 g gherkins* (fill weight without drained weight)
1/2 jar of pickle juice (approx. 150 g drained weight)
1 onion
250g vegan mayonnaise
25 g fresh/frozen dill
15 g fresh/frozen herb mix (parsley, chives, basil)
Salt & pepper
*I recommend cornichons, as they are the crunchiest pickled cucumbers and add more bite to the pasta salad.
Preparation
First, cook the gluten-free pasta according to the package instructions until al dente. Then drain and transfer to a large salad bowl.
While the pasta is cooking, slice the pickles and dice the onion, and add them to the bowl. Important: Don't throw away one of the jars of pickle juice, as you'll need it later.
Now finely chop the fresh herbs or thaw the frozen herbs and add them to the remaining ingredients.
Add the vegan mayonnaise and half a glass of pickle juice and mix everything together.
Finally, season with salt and pepper, mix well again and then refrigerate for at least 2 hours.
